June roses and rosé


For the month of June 2008, Jeremy’s Restaurant in the heart of the West Sussex countryside, will be realising the cooking potential of flowers, namely roses, to coincide with Borde Hill Garden’s Rose Month in June.

Jeremy’s Restaurant, described as “one of the most highly regarded restaurants in the south east,’ enjoys a wonderful location within the grounds of this much admired and botanically rich Sussex garden, which is set in over 150 acres of traditional parkland. The Jay Robin’s Rose Garden, which was created 12 years ago with 500 David Austin fragrant rose bushes, adds a blaze of colour and interest in the late spring and early summer. Chef proprietor of Jeremy’s Restaurant, Jeremy Ashpool, adds, “There has been a significant rose renaissance in recent years, both in terms of growing and now more recently in adding to food.”

Head pastry chef at Jeremy’s Restaurant, Shelagh Jackson, comments,“Roses add a pretty and versatile addition to many dishes, such as ice creams and sorbets and to decorate summer plates. One of my favourite dishes is rose water melon soup with rose water sorbet, it is also a tantalizing partner to chocolate.”

For the month of June, Jeremy’s Restaurant will be offering a mid-week, 2-course Rose Terrace Special lunch, featuring a changing rose-themed dish, at £16.50 per person. “A glass of beautiful, chilled rose from Provence makes a perfect accompaniment,” adds Jeremy Ashpool.

An ideal combination for food and rose lovers alike, visitors to Borde Hill Gardens, which opens to the public from 21 March 2008, can enjoy a leisurely walk around the gardens, park and woodland, followed by lunch or dinner at Jeremy’s Restaurant.
