Food Allergy and Intolerance Week, 21 – 25 January 2008
Breakfast is said to be the most important meal of the day and as creatures of habit, we all tend to eat the same thing day in day out. But with Allergy UK telling us that almost half the population has to check food labels before eating (2% suffer from a life threatening allergy and an estimated 45% of the population suffer from food intolerance), it makes sense to vary what we eat to get all the goodness we need without compromising our health. We all know that a bowl of porridge is a great way to start the day but if you feel like something deliciously different, why not try these easy recipes for muffins and a smoothie from Oatly?
BREAKFAST MUFFINS
Makes 12 large muffins
250g plain wholemeal flour
115g porridge oats
3 tsp baking powder
1 tsp ground cinnamon
1 tsp mixed spice
75g soft light brown sugar
100g dried cranberries
300ml Oatly oat drink
5 tbsp sunflower oil
1 large egg
1 tsp vanilla extract
2 dessert apples
1.Heat the oven to 190C/375F/gas mark 5. Place muffins cases in a deep muffin tin.
2.In a large bowl mix together the flour, oats, baking powder spices, sugar and cranberries. Whisk the Oatly oat drink, oil, egg and vanilla extract together. Peel and grate the two apples.
3.Add the liquid ingredients to the dry ingredients with the grated apples and quickly fold together with a large spoon or spatula, but do not over mix.
4.Spoon the batter into the cases. Put the tray into the heated oven and bake for 20 minutes until risen and golden.
5.Transfer to a wire rack to cool. Best eaten the same day of making, but are still moist the next day if stored in an airtight container. Perfect for breakfast or brunch or adding to lunch-boxes
RASPBERRY SMOOTHIES
Serve 4
750 ml Oatly oat drink
150g frozen raspberries
½ medium banana
45ml orange juice
Put all the ingredients into a blender and whiz until smooth. Serve in glasses.
